What do food preservatives and nitrites taste like?

Someone brought this up in my Trader Joes "ribs" thread, and I commented how TJ's ribs tasted better than Lloyd's because it wasn't treated with nitrites or preservatives. But when asked what they tasted like alone, I'm unable to answer.

Anyone?
