What determines a meats color?

Like it says, whats the determining factor in a meats color. Beef is red meat. Poultry comes in dark and light. Whats pork? Is it red or light?

Also, what type of meat do you think people are??

Most warm blooded mammals are considered red meat, with the exception of pigs. Pigs are considered white meat, so it cant simply be "warm blooded mammal" to be red meat.

White meat and dark meat in poultry is generally based on muscle use. More fat content makes a dark meat, less fat content makes a white meat.

If poulty meat color is based upon muscle use why isnt it the same for, say, beef? Why arent the leg muscles white meat and the rib area dark meat?

Blood amount, age, oxygenation (which is why packaged meat often is sealed with carbon monoxide now - to preserve the "redness" of the meat)
