What could cause this?

Temperature isn't fluctuating. That's the car idling at really high rpm. The fix is to turn the car off and turn it back on again.
 
Seems like whatever controls the idle is getting stuck for some reason. It's either failing, or it's getting bad info.

IAC valve or stepper motor?
 
So it just dies? These are tough problems to diagnose because a number of things can cause it to cease. The easier problems to fix are the ones where the car won't start...

I've seen ignition switches cause this problem before. Basically, the wiring harness that goes from the key through the steering column to wherever it plugs in can sometimes get worn wires and they can short out....causing all kinds of weird things.

I had this happen in my buick. $96 and about an hour and a half of work fixed it for me.

Just like the asker there...you could end up replacing 10 things before you hit the one that's causing it, unless the computer tips you off on what the problem is...
