Im a fry cook monster. TIP #1 Never ruin your grease by cooking stuff that was dipped in flour in it, until your grease is approaching change time. It will last longer that way.

Now... Videllia Onions, dipped in a beer batter (you can use water instead of beer) which is beer, flour, salt, pepper, garlic, etc (your mix here) and is some what thick.

SWEET POTATOES, sliced thin (best use a Food Processer, wonderful purchase to go with a fryer) like chips. Sprinkle lightly with salt OR sugar. depends on your taste/mood.

Too make Crispy fried potatoes the secret is to get it hot, dump all your potatoes in , the temperate will drop naturally AND manually lower it too, and bring it up SLOWLY. This is art and takes practice to get just right.

.. thats all for now folks.

Another vote for Peanut Oil here.

Save a milk jug to put used oil in when it comes time to change the oil. Much easier to disopose of that way.

If you batter your own food, the oil will not last as long, since more "waste" falls off and accumulates in he bottom of the fryer.... at least that's been my experience.

We used to have "Fry Night" parties where everyone had to bring something to fry... fries, tater-tots, fish sticks, cheese sticks, onion rings, mini-tacos, etc. anything we could find in the freezer section.

I even tried a recipe once for homemade "Hostess Fruit Pies".

Alas...my fryer died a few months ago. :(

So I have a new one on my Christmas List. :)

If you want to make your own fried cheese sticks:

1) Cut some string cheeses in half.
2) Mix up an egg and some milk.
3) Dip cheese in egg/milk.
4) Roll in seasoned bread crumbs.
5) Freeze for an hour or so.
6) Fry 'em up.

If you don't freeze, the cheese melts before the outside cooks and it spills. Like others have said, save this for near the end of the oil cycle.

Seriously, your arteries will never forgive you for using that thing.

However, if you could try and include some of the 'mediterranean diet' - this may help offset some of the effects.

Mmmmm. Deep fried, battered quattro formaggi pizza. ...droool.

probably the best thing you can make with a deep fryer.

Fry once, pat dry, and then put them into a tub of sauce.
Now put them back in the fryer.

Mmmmm, double hot oil goodness.
