What are your favorite vegetables?

I feel like making some garlic sweet potatoes. I haven't quite decided which meat to include in the meal, but will probably end up marinating some chicken. I just can't decide what vegetables to go for.

Some that cross my mind include
- Asparagus
- Broccoli
- Carrot
- Celery
- Snow peas
- Zucchini

I'd love to include those little mini-corn things but can't find them outside of anything frozen.

I'm also going to make some cheese stuffed jalapenos, if that helps any. I'm drooling thinking about it, but anyway hopefully somebody here can help spark some ideas!

lightly fried asparagus with lightly fried zucchini blossoms.

Asparagus is IMO, the best vegetable ever grown by mankind. It's awesome grilled, fried, steamed, baked, or boiled... mmmmm

Zucchini is damn good too!!!

Stuffed or grilled peppers.

Although I like everything you've listed, except for asparagus.

I'm somewhat of a cooking noob, but I want to somehow combine good and full taste with nutritional balance. I know that some veggies lose nutrients while cooked certain ways, and others actually increase their nutritional value when cooked (carrots and others). I want to keep that in mind ..

I found some ideas for marinades online, but I'm open to any suggestions for that too.

Red Peppers are my all time favorite.... good flavor and crunch when raw.
And just gets more awesome when roasted.

Is there any other vegetable that can claim that?

Broccoli and onions are probably my top two; there are very few vegetables, if any, that I dislike.

Well, to be fair, I'll eat asparagus if it's served; it's just not my favourite, and I don't eat it when I cook for myself.

I don't cook my vegetables - I eat them raw or steamed, so the nutrients are preserved. I'm not sure how the nutrients are affected by grilling though.

Fair enough. Raw is double awesome since you don't have to waste time cooking.

Thank you ppl for reminding me of spinach and red peppers. Damn... why is it so hard to choose?

WTF, the OP listed celery? :D :p

To me, celery is just something to throw in for crunch. It doesn't taste good.

I'm not a fan of squash, but I'll eat it if I have to.

My favorite vegetable....an onion?

IMO, a lot of the time how things are prepared is a deal breaker. I used to hate chick peas and lentils until I ate at this one place, whatever they did, boy was it ever good!

As for celery well ...... I dunno what to tell you, my taste for celery changed in the past couple years I guess. Now I like it, and I'll eat it by itself whenever. heh

Actually whether we know it or not, corn is our favorite veggie since it's in practically every fucking thing we eat.

Celery is a negative calorie food. You actually lose weight just by eating celery.

It also has fiber, which will help you poop! :D

I like broccoli, cauliflower, bell peppers (red/orange/yellow>green), onions, green onion, potatoes, sweet potatoes, beets, lettuce, cabbage, carrots...and a lot of other ones I can't think of :p

I don't really understand green/red peppers at all... no taste, no texture, no spice.

Strawberries are good :) No need to put sugar/fake sugar crap on them. :p

Bell peppers definitely have taste and texture. No spice though :\

Green peppers are great. Not much spice, but they have a nice flavor. They're one of my daughters favorite snacks for dance, and school.

I actually like the other bell peppers more (orange/red/yellow). Green has a slight bitter taste to me.
