What are you making for dinner tonight? **PICS OF MY DINNER INSIDE**

EDIT: PICS! It's in the oven now, but I snapped these with my cell phone before it went in: Shrimp Casserole 1, Shrimp Casserole 2

My dinner tonight:

Shrimp Casserole
1 lb. small cooked shrimp
1 small box brown rice
1 can cream of mushroom soup
1/2 green pepper, chopped
8 oz. cheddar cheese, cubed
2 tbsp. lemon juice
2 dashes of Tabasco

Cook rice as directed. Combine all ingredients in casserole dish. Bake at 375° F for 45 minutes.

Serves: 4 to 6 people
I can't wait...I just bought a Corningware casserole dish a couple weeks ago and I've only used it once so far (for chicken stew). I'll probably start making it around 3:00.

Hmm I want to try making that sometime.

What size is a small box of brown rice? We usually buy rice by the bag and measure it in cups.
Is the can of cream of mushroom the concentrated campbells stuff, or non concentrate?
Can I substitute velveeta for the cheddar cheese?

Normally I don't pay much attention to recipes but I love casseroles. :)

I have a big box of brown rice, so I'm just going to use half of it (2 cups). I'm not sure if that's the right amount, but hey. :) As for the cheese, I got shredded cheddar since it was on sale and cubed wasn't. ;) Cream of mushroom soup is cream of mushroom soup...there's really nothing to it. I just got store brand. Condensed soup is stuff like chicken noodle, but I'm using cooking soup, so there's nothing to decide about.

That's why I love casseroles. I'm certainly not a cook, but even if I mess things up a little, by the time everything's stirred together, it tastes great.

I'm gonna add a can of corn to the recipe too, since I love corn with seafood. :)

I'll post pics if I remember before devouring it! :)

chicken fried steak with gravy
and mashed potatoes with bacon and cheese

you can alwasy sub velveeta. its part cheddar, and 2 other cheeses (i forget which, 1 is colby i think) and its pretty creamy too.
