The blood is not going to hurt you. Cooking will not get rid of blood. If the inside flesh was pink and flesh colored then its undercooked.

salmonella gets into chicken meat if, in the processing, the intestines are split. When the carcasses are washed in a huge vat, the contents of the split intestines also enters the water, and any chickens washed after that are contaminated. If the chicken (or duck, or turkey) is processed in such a way that that does not happen, then the exposure is minimized.

I got that info from an expose news show (60 Minutes ?) I saw several years ago, maybe the procedures have changed since then

Like I said, 1 in 100.
It may have some bad stuff in it, and it may not, but either way, it is unlikely that it will make you sick.

IIRC from food science class, the chances are actually about 50/50 that the meat was diseased. As long as normal precautions were taken during production/packaging/cooking, your chances of getting sick from eating the meat completely raw are about 1 in 25. Add the fact that it was mostly cooked and your chances drop to about 1 in 100. (Figures may be slightly off, took the class about four years ago) Either way, food poisoning can take anywhere from a few minutes up to three to five days to manifest, so it make take awhile to know for sure. Bottomline, I wouldn't worry too much.

not

The bacterium campylobacter, which can cause food poisoning, was found in 42 percent of 484 fresh broiler chickens tested for a survey in the January issue of Consumer Reports. The magazine said Tuesday that 12 percent of the chickens had salmonella, another bacterium. Both bugs can cause diarrhea, fever, abdominal pain and sometimes death.

However, healthy people do not always get sick when exposed to small amounts of these bacteria. It requires a certain number of bacteria to cause illness. Simply finding so many PPM in a chicken does NOT mean one will contract the illness.

Our bodies have immune systems for a reason, and we are exposed to harmful bacteria and viruses every day. Only when our immune systems are compromised, or overwhelmed by large numbers of bacteria, do we get sick.

In other words, the key word in your quote that people so often overlook in their hysteria is "CAN." "Can" does not mean "always does."

Which food poisoning manifests itself in a few minutes?
