What are the best asian movies ever?

I recommend Ong-Bak (Thai) and The Host (korean). I will warn that the anti-American bit in the beginning is a bit hard to take, but it's still a solid movie. Once you've seen it, you'll know what I'm talking about.
 
I love Kurosawa, but I assume you have seen most of his big films. One of my favourites of his that is not mentioned as often is The Bad Sleep Well http://www.imdb.com/title/tt0054460/ one of the greatest opening scenes I have ever seen.

For recent films Mother http://www.imdb.com/title/tt1216496/ from Korea (by the director that did The Host - Gwoemul) was one of my favourite films from last year. It's just awesome and one I plan on picking up if I can ever find it on Blu-ray here. More people should see this movie.

The only Kurosawa film I've seen is Seven Samurai. I loved it. I guess I should check out other films by Kurosawa...

The Criterion Blu of Yojimbo is coming out soon, you should definitely see that one. A classic.

Japanese?

Akira Kurosawa has one of the best filmographies of any director, alive or dead. Seven Samurai, High and Low, Yojimbo, Kagemusha, Ikiru, Rashomon... You can't go wrong with him.

How about a Takeshi Kitano film? Sonatine practically resurrected the dying Yakuza film genre in Japan back in the early 90's. His films tend to have soft, quiet moments that are interrupted by brutal violence.

Sonatine is probably one of his best films but also check out Hana-Bi, Violent Cop, or his yakuza-less films like Kikujiro, Zatoichi: The Blind Swordsman, and Getting Any?

As for Chinese...

You have John Woo, of course. The Killer and Hard Boiled are two shining gems of bullet-ballet.

Ringo Lam is a director who often gets mentioned under Woo. His films contain action like Woo's but are often more realistic in the way that violence is portrayed.

His "Fire" trilogy is a must see. City on Fire is said to have influenced Tarantino's Reservoir Dogs; Prison on Fire and School on Fire are just as good. Full Contact and Full Alert are other notable films of his.

Infernal Affairs - The Departed was crap if you knew anything about IA...

surprise it took this long for someone to mention it.

I never liked parts 2 and 3. It seemed like it dragged it out.

kinda sucks that since then HK has yet to produce something as good as IA.

somethings come close. like Election 1 and 2.

this year I can think of the movie Accident. but I've seen too much of Louis Koo lately I'm not high on it.

anyway, it's hard to find a decent asian movie these days that isn't ridiculous gun blasting, flipping, BS craptacular stunt work, emo characters with childish haircuts and such. At least, this is mostly what we get over here in wider release.

all that being said, it's tough to top Roshomon, Seven Samurai, etc.
