I'd say to let her go for whatever she'll be happy using in her career.

My kid sisters about to apply to college. Deadlines coming up at the end of the November. I asked what she wants to major in and she says psychology. Whats in demand right now? Anyone know? I know its not psychology.

Personally, I think it's better to go into a field you like and eventually take lower pay, as opposed to going into a field you hate and winding up with a slightly higher pay.
Maybe she should enter college as undeclared, take a few courses, and through that find out what she actually likes?
