Chicken carcasses are about 12% of the price by weight of normal chicken here ($1/kg vs ~$8-15/kg) and they make a great base for stocks and soups. This goes for most cheaper cuts of meat - they're harder to cook conventionally, but once you get the hang of it they are really flavourful and really cheap, cause few people want them. The only thing is, you might have to specifically ask for them at the butcher or the supermarket cause they might not evem have the, out on display.
Vietnamese sandwiches, french baguettes split with pickled shredded daikon and carrot, grilled pork, or my favorite spam and scrambled eggs, sliver of jalapeno, wedges of cucumber and some kind of sauces. Nothing else like it.
Mexican food in Mole sauce, sort of a spicy chocolate, meat is usually chicken.
