Not a lot really.

MS Office 2007 Professional
FF 2.0 w/ Ad-Block Plus & No-Script
Irfanview
Foxit PDF Reader
PDF Creator
CCCP
Filezilla FTP
uTorrent
Google Earth

That's about it. I'm not including IT tools I use for work though.

My computer essentials (Windows):
Firefox
Pidgin
MP Classic with installed codecs
AntiVir
MS Office
Spyware S&D
Pymol
Foxit
Winamp
Rainlendar

putty
firefox
7zip
ventrilo
vlc + mpc
winamp
flashfxp, or filezilla for free ftpclient
newsbin
utorrent
steam
openoffice
cdburnerxp
daemon tools
foxit

trillian (what's different about pidgin?)
utorrent
klite codec pack (includes media player classic)
powerarchiver
kee-pass
opera

Firefox with noscript, adblockplus, video downloadhelper, convert page to pdf, interclue , IETab plugins...
OpenOffice
Windows Live Messenger
FrostWire
Winamp
Nero
K-Lite Codec Pack for codecs, Media Player Classic and FLV playback
Foxit PDF Reader (more light-weight than Adobe and works pretty good)
Spybot Search & Destroy
WinRAR
uTorrent
HTML-Kit
Avira AntiVir Personal
Google Earth

Ok, so maybe they aren't all essentials.

Essentials:
Office 2007
Winrar
Avast antivirus
Foxit PDF
VLC player
Utorrent

I could deal with the remaining default, albeit inferior, programs like IE

pidgin
fire fox w/ ie tabs ( work web based database query tools do not like firefox)
office
vlc

for work: warrior, log viewer pro, outlook, summit (sap software).

at first i was thinking:

tent/tarp
sleeping bag (depending on climate)
fire making device
cook pot
knife
clothing

In order of priority:
Hamachi
Firefox
Remote Desktop Concurrent Users Hack (termsrv.dll patch - XP or Vista)
Winrar or 7-Zip
Metapad
cygwin

I generally administer a lot of my family's computers, so I like to be able to access them remotely (hence the Hamachi + Remote Desktop hack). I put those on first and then can do any more maintenance without having to physically be at the computer.
