what do you think of this SLI system?

Nice stuff!! I'd personally suggest getting DFI's SLI board since you're going all out and grab some OCZ VX series memory. DDR500 at 2-2-2-5 is nice.

-Are you gonna get a Raptor for that system?
I'd suggest getting the PC Power & Cooling's 510W Deluxe SLI PSU

I think it's a terrible idea to get an FX-55 and only get a couple % increase over a processor that costs hundreds less.

A PC power and cooling PSU would be nice.... or a Seasonic 600watt PSU.

I think cutting back the single videocard and cutting back the processor a bit would allow two 6800gts in SLI right away that would blow away your initial setup and would cost hundreds less than your initial system with the second 6800Ultra OC and would allow you to have the same settings on everything with just a small decrease in framerates.

No one the processor. Get a cheaper one and overclock it to 2.6. (3500+). Get 2 6800GTs with money saved. The seasonic is quieter.

Get OCZ VX PC4000 or cheapo Twin Mos/G.SKill/Mushkin Blueline.

pcp psus are some of the best. now as they said, get a 3500+ venice chip coming out soon(in a matter of days) and it will easily oc to about 2.8 and probably hit 3.0. now as far as the ram goes, you can buy gskill cas 2 value ram for $110 and lose maybe 1-2%performance max. then spring for 2x 6800ultra or gt in sli on a dfi nforce4 sli lanparty board.
