leavin work early to head to costco for some untrimmed beef brisket

got a ton of mesquite-infused coals with enough oak, cherry, hickory, and assorted wood chips at home

i think ill do overnight rub, smoke saturday morning, have brisket at night, and left-over chopped beef sammiches for sunday

I tried something different last weekend with a brisket. I cut a pocket into it and stuffed it with hickory smoked bacon (1" pieces) and some chopped white onion. Closed it up with bamboo skewers and put a rub on it. Smoked it as usual with hickory. It came out pretty good. You could taste the bacon and onion in there but it wasn't overpowering.
