I am considering THIS template for my business.

Is it difficult to remove the music so that the user doesn't have to select to turn it off? Can I turn off the music and keep the small sound when the cursor goes over a menu selection? (Is that annoying too?)

I use an old 533 mhz machine at the office and the site demo runs pretty slow. Is it unusual for anyone to have a computer this weak or would you think about using a site that takes less to view?

You can easily delete the music track in the flash source file. As for your computer, full flash sites are more processor intensive compared to standard pages, so yes they may bog down slower computers.
 
If you're marketing your site toward those most likely to still be on bandwidth restricted Internet access, like dial-up or ISDN, you might want to consider how an all-Flash site would affect them, as well. In my experience, they've loaded slower than a comparably sized HTML/XML page. Could be I just have limited experience, though.
