I'm going to be passing through Texas along I-40 on the return leg of my road trip, and I've never tried Texas BBQ, or even been to Texas for that matter. Anywhere along I-40 is fine. I currently have no idea when I'll be driving down it :(

Or some other native-to-Texas cuisine is good too.

EDIT: Somewhere kinda cheap-ish would be best. I can't throw down $15+ for an entree.

Just look for a halfway decent looking roadside place that looks halfway busy and pull in. 95% chance that you will leave happy.

Not really a whole lot bad....or good there. I found Lubbock a little better, but not that much.

Unless you find cattle, a sulfur factory, a prison, and a nuclear weapons plant to be high entertainment.

What about for those of us that are no where near Texas? Any advice for ordering something online or recipes?

I think you got that wrong. Texas is a great state except for the shitty part known as Austin.
