Upgraded to v2004 and noticed a BIG problem ( for me ).
I have had 2 forced reboots this week since my upgrade to 2004.
This particular system has Security Cameras on 24/7.
( or it did before ... )
2 days this week I found this system at the logon screen.
( rebooting when unattended for updates. )

The ONLY thing I can see to modify this behavior is to set

" Pause updates for 7 days "

so I can rest assured this computer wont be shut off !

Does anyone know of a better solution ?

Yes,. get Windows 10 LTSB, and shut off updates in that edition (I think that you can for one year at a time, so I've heard), or try getting ShutUp10 (utility), and use that to shut off Windows Update, or simply disable the Windows Update service.

If you are really ambitious, you can do the following:

Don't know that I would do it on a Windows machine that wasn't going to be on the Internet, though...

Again, only if your machine isn't on the Internet....if you access your security cameras from the Internet, it isn't for you.

Cameras are hard wired to local router.
It's not for me ... described below ... thx anyway

Due to the modified nature of this Windows installation, there are various possible security and stability concerns to consider when using Windows 10 AME. The entire removal of the Windows 10 update subsystem, coupled with the lack of automatic driver detection, beyond what is included in the 1809 build of Windows 10 from late 2018, requires manual action in order to configure proper and safe operation.

The last update ( yesterday )
( my auto-update delayed 7 days x2 times )

Now they only allow pre-assigned dates for " delay "

What the Fvck
" windows is a service " --- that suks now

the latest date I could select was Jan 7th

So yeah ,,, I can expect a forced reboot on the 7th
Thanks MS.

Why do I feel like someone was inside my computer...
... oh right ... MS is always inside my computer ...

... turning it off ... when I turn my back ...

... feeling violated ...

( 4 hours of HWINFO monitoring gone ... )
