Is there any VNc out that dosent need an install? Like something that will run as a service only? Or something that can be totly invisable, ie no visable folders and not listed in add/remove programs? Thanks.

Why would you want it to be TOTALLY invisible? There is no real ethical reason for this, so VNC programs purposely do not "hide" their program.

You can use the client (viewer) portion without an install, but the server (service) must be installed in order to run properly. If you really don't want it to be on the Add/Remove Programs list you can remove that entry from the registry after you install the service, but this will likely prevent you from being able to uninstall it again later.

You can use STRCM to remotely install VNC as a service. It will not appear in add/remove programs.

No it won't, the entries in that menu just run whatever uninstaller the installer tells them to. As long as he keeps around what to run, he'll be fine.
