I dont think there are any liveCD for Vista PE because Bill Gates never tried out BartPE before

Vlite, not exactly a boot disc but can be configured to create a bootable striped down version of Vista.

The XP bootable disc should still work well enough. It may not be the newest O/S, but I think it's better suited for a LiveCD.
