Vegetarian Recipes

I'm dieing to find good veggie meals that don't contain any processed corn products (eg. High Fructose Corn Syrup) or any of the other nasty chemicals we put in our food (MSG, sodium benz.)

My first dish is whole grain brown rice, 1/2 oz organic hummus and 1 tablespoon full of peanut butter...sounds gross, tastes good.

My second dish I created this evening
1/8th cup white rice 1/8th cup whole grain brown rice
Coat the bottom of the pan with extra virgin olive oil
chop and caramelize 1/2 white onion
1 diced roma tomato
small handful of spinich
4 cloves of garlic
Pinch of NaCl

OMG it's good.

so what are your creations? (No meat, no dairy, no 'bad' chemicals)

Uh you made fried rice, congratulations.

Your first recipe sound like something you'd slather on a pine cone and put out for birds. Gross.

I try not to steam my veggies, I have a tendency to over steam them and I don't like the consistency of baby food ;). If I could do it right it'd be good though.

no the rice was just cooked in water, not in the oil. forgot to mention that. (I have a rice cooker...)

So you made rice with, what, 2 tablespoons of sauteed vegetables? A "small handful" of spinach cooks down to about a teaspoon of cooked spinach. I usually cook down 2 big bags of baby spinach just to make a side for 2 people.

That sounds good, I'll have to try it. I wish tofu wasn't so expensive, at least where I shop you pay through the nose for it.

I have to watch soy sauce, more and more of it has high fructose corn syrup in it :|

usually fried rice has eggs in it. he made brown rice with veggies. meh.

the only veg thing i can think of that i do with no dairy or meat is a tomato sauce or roast vegetables. cutting out meat and dairy cuts out so much good stuff. as much as i love food and cooking, and even though i always have a vegetable on the side, vegetable "dishes" are pretty damn rare for me.

i like sauteed asparagus....but i use butter. you could use olive oil, i guess, but i like butter and a little breadcrumbs.

also, roasted, marinated bell-peppers are good for bruschetta.

now im running out of ideas :p

Well it was for 1 person, and I think it was a good amount of veggies. I also didn't want the spinach to overpower the rest of the dish. I mean I did use whole tomato and half an onion so that is > than 2 tablespoons ;).

No asian supermarket around? I get a half-gallon pail with six large pieces of tofu for 3.25. I believe you can get a single piece of plain tofu at Trader Joes for like 1.50. The flavored and americanized versions are the expensive kinds that I've found.

For whatever reason that stuff doesn't work for me. I can eat cultured and processed dairy such as ice cream (which I tend to avoid because of the insane amount of sugar) cheese and yogurt but for whatever reason milk doesn't work in my system at all. That being said, I have no problem cutting dairy out of my diet.

I make a mean vegan spaghetti:

Fresh tomatoes, bell peppers, garlic, onion (I prefer yellow onions), mushrooms, and cilantro. Olive oil in a hot pan, finely chop everything but the tomatoes and garlic, and saute to brown goodness, dump contents into large sauce pan, but don't lose all the oil in the saute pan just yet. Coarsely chop tomatoes, dump into sauce pan along with a couple cans of tomato sauce. Simmer for 15 minutes, then add dry spaghetti sauce packet (get one that is non-dairy). In saute pan, fry up tofu and garlic until golden brown, then dump into spaghetti sauce. Cook your pasta until firm, drain water, and then you're done.

For vegan garlic toast, get some wheat bread, use Smart Balance Organic Buttery Spread and garlic powder (or freshly chopped garlic), and toast it to golden perfection.

I made this for my parents one time along with some steamed broccoli, and it wasn't until the end of the meal they actually realized there was no meat or dairy products to be found anywhere. :D

You should just look in Asian cookbooks, especially Indian. We make vegetarian food on a regular basis, though we often include dairy (vegetarian != vegan).

What you made is pretty basic, but if you put some spices in it it'd be a lot better. You could try Biryani, Malai Kofta, any number of vegetable curries, dahl, etc. All of these are delicious.

You could also try other simple Asian dishes: Lo Mein, Singapore Noodles, etc.

As others have mentioned, you can use tofu. My recommendation would be to dice the tofu and sautee it in some oil with spices. Make sure you sautee the spices first to bring out the flavor, then if you sear the tofu in the spices it will retain that flavor. If you make the tofu too large you get a disproportionate balance of tofu to spice, and that's no good since tofu has so little taste.

This is SUCH a staple of the hard core veggie diet. You learn to appreciate the taste of different veggies. Tamari (soy sauce) and gomasio (lightly oven toasted sesame seeds with some NACL) are two main flavorings -- not to mention, nutritional yeast.

But there are so many different asian, and especially (to my particular mind), Indian spices, sauces and recipes -- there is no limit!

Tofu is great source of protein, and is the perfect blank palate for soaking up wonderful flavors.

Black bean sauce rocks. Beside Asian markets, local food co-ops are also a great source of low cost, bulk tofu. You just spoon it out of the bucket into your own water filled container.

Get hip, get healthy. ;)

wow, i'm like you. i just can't drink milk or eat ice cream but cheese is totally safe for me.
