Dude, you steam your veggies very, very lightly. Limp veggies are like a limp dick, they just don't get the job done. :thumbsup:


And you always drink the juice -- with a dash of salt, mmmmmmm -- or re-use it as stock.

I went through a PETA phase in high school and became a vegetarian... but all I ate was PB&J and junk food

I always wondered if I could use or drink the 'juice' from the steamed veggies, great info :D (Don't know why I thought I couldn't). Is it better like a hot tea or cold? I'm new to this type of lifestyle.

As for the meat eaters, I got nothing against you I've eaten my fair share of cow, chicken, turkey, pork ect. I choose to eat veggie because first and foremost meat is a luxury expense on my budget.

I detest the meat industry. Feed lots are the worst thing we could ever do to those animals, by the time the the meat reaches your plate the animal is weeks away from death caused by acidosis, the quality of the feed they use is piss poor and that is being introduced in to your diet as well. "You are what you eat" so are they, and if we feed them shit and then eat them we are subsequently eating shit. Since I've started eliminating meat and other products from my diet I feel better, have more energy and I've lost close to 20lbs. That is why I choose to live this way. I love a good steak, greasy hamburger, turkey sandwhitch, bacon and eggs...but not at the cost of MY health. I don't storm in to your threads and shit my veggie ways on to your head...so please keep your shit out of mine.

So you made rice with, what, 2 tablespoons of sauteed vegetables? A "small handful" of spinach cooks down to about a teaspoon of cooked spinach. I usually cook down 2 big bags of baby spinach just to make a side for 2 people.

My little leftover from my vegetarian days: (from memory, which is a bit cloudy, so the measurements may be a bit off)

Rob's Tasty But Not Well Thought Out Tex Mex Spaghetti

4 fresh tomatoes
2 small cans tomato sauce
1/2 little can of tomato paste
few dashes of cilantro, italian seasoning, extra dash of basil (really love basil)
1/2 onion
several jalapeños
1/2 bell pepper
dash of garlic to taste
dash of sugar
(RoTel can be subbed for a lot of this)

slow simmer with near constant stirring until fairly thick. pour over vegan spaghetti. filling, tasty, and hot.

I think I forgot something, but you get the gist, plenty of italian and mexican stuff thrown together.

my girlfriend makes a pretty tasty and simple veg dish.

orzo - cooked up whatever amount you need in broth if you so desire, or in water.

sautee a large onion until caramelized. add in garlic to taste. salt & pepper. add in a can of drained chick peas and a can of diced tomatoes. add in the cooked orzo, some olive oil, then just mix it up. top off with more olive oil and parm cheese.

simple and delicious.

If you stay strict vegan, narzy, you will find yourself LOVING nutritional yeast (similar to brewer's yeast). Your body will crave it (really) for the needed B vitamins. It's an excellent topping for your steamed veggies and rice, and can be used with tofu to make a "cheesy" vegan lasagna that tastes superb.

You should reading the book Becoming Vegan if you're interested in vegetarian/vegan nutrition (or nutrition in general). It covers everything. Your local library may have it. There are also a huge number of vegetarian/vegan recipe books out there, as well as online recipes.

Pumpkin and Black Bean Soup
Recipe courtesy Rachael Ray
2 tablespoon extra-virgin olive oil, 1 turn of the pan
1 medium onion, finely chopped
3 cups canned or packaged vegetable stock, found on soup aisle
1 can (14 1/2 ounces) diced tomatoes in juice
1 can (15 ounces) black beans, drained
2 cans (15 ounces) pumpkin puree (found often on the baking aisle)
1 cup heavy cream
1 tablespoon curry powder, 1 palm full
1 1/2 teaspoons ground cumin, 1/2 palm full
1/2 teaspoon cayenne pepper, eyeball it in the palm of your hand
Coarse salt
20 blades fresh chives, chopped or snipped, for garnish

Heat a soup pot over medium heat. Add oil. When oil is hot, add onion. Saute onions 5 minutes. Add broth, tomatoes, black beans and pumpkin puree. Stir to combine ingredients and bring soup to a boil. Reduce heat to medium low and stir in cream, curry, cumin, cayenne and salt, to taste. Simmer 5 minutes, adjust seasonings and serve garnished with chopped chives.
