Some friends and I are going to spend a month eating a vegetarian diet. It's partly an exercise in willpower (we all really do like meat, especially me), and partly for health. I have a host of recipes and cookbooks from previously being a vegetarian. I enjoy vegetarian foods (we all do). I am simply looking for proven recipes. I don't really need links to sites, as I've done the research I want.

I just want to hear taste recipes you have tried and liked. So, let's hear 'em! 😀
 
Many Indian dishes are veg, and very nutritious and flavorful.

There are some vegetarians I know that have no clue how to really be a vegetarian. They just throw some kidney beans on a salad and eat lots of pasta. 😛

I personally can't eat much tofu because of the soy. After doing some research, I realized that there are quite a few other grains/veggies that also have complete amino mixes, such as Quinoa.
 
I've really enjoyed tinkering with Brenden Brazier's "Thrive Diet". I think he just updated his book:

Basically it's a 12-week Vegan menu for athletes. Yes, twelve WEEKS, not days. This dude has some some serious research into making a real menu for Vegans. In all honesty, I haven't tried a recipe I haven't liked. I'm by no means a veggie, but I wanted to get away from refined food and eat healthier so I've slowly been integrating some of his recipes into my diet. His cocoa-blueberry power bars are amazing for long bike rides!
 
Thanks for the info guys! I want to enjoy this month, not spend it thinking about how I am NOT eating meat. I'd probably sub or mix something with the blueberries, but the idea sounds good and I've yet to see the recipe even. Nixium, yes, I will still be working out during this time.
