Vacuum sealed meat does indeed keep much longer refrigerated. "Fresh" NZ lamb is sold with 6-8 week (?) expiry dates at Costco. There are two layers of plastic and it is heavier than with consumer grade sealers. Freezer zip bags are arguably as good as the latter and may be vacuumed by inhaling through a straw or even directly with clean lips. Easy peasy lemon squeezy, sans claptrap.

Great stuff, at least the way I make it. I just a few hours ago removed the last ~6oz portion from my freezer. In a week or two, when that's near gone, I'll defrost a 2lb pork roast and prepare my next chorizo batch and freeze in ~6oz (small fist size) portions.

FYI - you can buy the commercial-thickness bags off eBay to use with a FoodSaver. Plus they're cheaper than the actual ones that FoodSaver sells :thumbsup:

I was recalling the rack o' lamb previously, but recently got a leg and paid more attention since remembering this thread... and it was from AU rather than NZ and only single layered. The rack was definitely double but may have been from AU too (they seem consistent over time). Anyway, I can confirm a 4 week best/freeze before date which is still very convenient.
