Fight the Valentines establishment and either make her dinner or take her out another night when the menus aren't fixed meals with high prices and inferior quality. And steal flowers from the neighbor's yard or something.

I do this with my g/f. She isn't materialistic, so she doesn't mind. I don't like the crowds and all the hype of V-day, so we go out the night before or after.

My four year relationship started under the pretense that Valentine's Day is evil (it is), so I've never actually had to do anything. Year One (approx 1.5 mo of dating) I just gave her a single rose. Other than that, I don't recall anything special.
