Does this make it so that network admins cannot view what sort of traffic is going on? Are there extra "precautionary" things that can be done beyond just what uTorrent offers?

It's just a huge hassle at my school where they'll call you in for downloading via torrents and then you have to explain that it was legal software or free music from an indie artist, etc., etc., and I just don't want to waste my time

It obfuscates the traffic somewhat, but I imagine there's still ways of telling when torrents are running. I don't know of other encrypting methods that would work.
 
I'd say it depends on how smart your IT department is. uTorrent's protocol encryption is there to fool traffic shaping that is usually employed by certain ISPs. But bottom line is, yes, its still possible to tell that it is bittorrent traffic.
 
P2P apps have fairly unique traffic patterns compared to "normal" client->server apps so while they won't be able to tell what torrent you're downloading or maybe that it's even the Bittorrent protocol, the traffic will still be suspicious.
