As a kid, I was play fighting with a friend of mine and managed to pull off a 1:1 Mortal Kombat leg sweep on him. He laid on the ground for a sec, and I went up to him to see if he was okay, once we made eye contact, we busted out laughing for a good 5min.

So yes, It can work.

If you qualify the Fight Night, UFC, and EA MMA, as fighting games, then it can all work. The caveats being that the skill to do so, requires many, many, hours of training. Also, certain tech involves physical prowess to perform them, which requires even more training.
