"Use mailbox store defaults"

"Use mailbox store defaults" box is checked when i create a new user with exchange email account in SBS 2003. "Delete Item Retention" is also checked use defaults.
My question is where can i set the default store space in the exchange server program? i tried find it but i couldn?t find it, any help?
