Upgrading C: SSD

ok SSD's are cheap enough now to upgrade my 120GB to a 525GB drive

I have never really used backups etc. in the past (just reinstalled windows at a cost of time). It seems fairly simple with third-party software or using windows to create a disk image & back up from a bootable usb or (or a bootable usb windows 7 installer)

however would it work (and be simpler & faster) to just mirror the drive in windows 7 break the mirror then extend the partition, then boot from the new SSD.

would this method work and boot?

If this did work how would windows deal with this if it thinks my old drive is still C: or will It default it to another letter if I boot the new SSD (been a long time since I done something like this)

I have a modern UEFI Bios MOBO but have the old style of HDD formatting not the new GPT
 
on second thought ill just use back up software(I hate intslaling stuff I don't need to) it looks like it might not be that easy and I don't know the disadvantages of changing from basic to dynamic disk, if anyone would like to enlighten me?
