OK, so I'm currently running the following:

AMD Opteron 144
2x 1gb OCZ ram
8800gt 512mb SLI

I want to upgrade to a triple or quad core amd processor. Finding a good SLI board for these chips is difficlut and Xfire seems to be performing better. How much performance would I be losing by upgrading to a 940 or 955 and going from 8800gt in SLI to a single 4850 or 4890 1gb? Would I be better off spending more and going with those in Xfire or getting an SLI board and saving a couple hundred dollars?

I'll be doing some gaming at 1900x1220.

Basically, I can't afford to buy 2 new 4850+ vid cards. Would it be better to upgrade and have 1 better vid card, or 2 of the same vid cards?

I'm pretty sure even the 4850 will wipe the floor with an 8800gt... if you want a budget gaming system, get a Phenom II x4 940 with motherboard combo, and then a 4850. Shouldn't cost you much more than $300. Or maybe go for a x2 550 if you can find a good enough deal on that.

940 with Motherboard for $220.

4gb memory is $50 AR or about there. Depending on if you can find a good deal on a 4850, should bring the price to 350. Maybe even a 4870/90 since those are getting cheap.
