Hiring people is an expensive process and a company doesn't want to get suckered into doing it more often than necessary.
Using myself for an example, I have ~ ten years of experience as an analytical chemist and project manager experience. Even if I de-emphasized things on my resume, a hiring manager at McDonald's (or generic low wage job) would probably look at it and just think - absolutely correctly - that I will jump ship as soon as a position in my industry is available. Who is going to hire somebody that will just quit at their best possible convenience?
