Year round... though I really don't grill on a consistent basis. I may grill several times in single week and then go a month without. But, yeah, I will grill in a foot of snow.

I think we got our Weber Smokey Joe for around $20-$25 at Target. That's all I've used until this year when we go the Weber Smokey Mountain. I'll still use the Smokey Joe for steaks, burgers, chicken, pork chops, and vegetables. As for only flipping the steak once...you've got to turn 45 degrees, flip, turn another 45 degrees, and then be done. Perfect grill marks, all your friends then think you are some fancy chef. 😉

So far with the smoker I've cooked ribs (Alton Brown's rub recipe...slightly modified), ham, turkey, and standing rib roast. THAT is some of the best meat you will ever have.
 
can you guys give me tips on curing and maintaining the cast iron grills on my grill

i have usually only grilled during the summer and even though i try to clean and oil it before i stoe it..inevetible it will have rust stains next summer..i clean it with sopa an water and brush but i still ocassionally get black reidue on the meat when i cook...i dont know if thats normal...
 
BTW, I think I am going to have to grill tonight thanks to this thread. I'm kind of in the mood for chicken. Anyone have any good grilling suggestions for chicken that doesn't require any sort of overnight marination (since I obviously can't do that if I want chicken tonight)?

We live in an upper and if we ever need anything bigger, the neighbors downstairs have the 18" and a big 24" Charbroil grill.

Does anyone use the chimney starters for charcoal? I got one last summer and now I have 2. I haven't bought lighter fluid since getting them, so I have an almost full can sitting with my grill stuff.

I needs some details.

Take chicken, put your favorite rub on him and good portion of the rub into a half drinken can of your favorite beer.

Shove beer up chicky butt, chicky is now sitting on his beer throne.

cook at 350, coating with your favorite homemade (or store bought) bbq sauce the last 10-15 minutes. Even better if you have some smoke wood handy.

Don't use soap and water! The oils in the foods you cook are what season the cast iron. Soap and water removes those oils and then the grates can rust. Just scrape it clean with a grill brush at the end of the season and before you cook the first time. Preheat it for a bit longer the first time you use it to kill off anything that may be harmful.

Save yourself the time and trouble and just buy the match light kind (BJ's has a great price on two bags), one flick of a match and the whole thing catches and within five minutes you are good to go.
 
i love doing two things as "additions" to eating MEAT...
1) Take a whole clove of garlic, cut the top 8th off... put it in a tinfoil pouch with a bit of olive oil and salt and drop it in with the coals. Let it cook for about 30-40 minutes. It will have soft cloves of garlic that are extremely sweet to spread on fresh french bread.

2) Take corn, removing the husks most of the way (but do not tear them off). Brush corn with olive oil and seasoning salt and put husks back over cob of corn. tie husks at the top of corn cob and let grill until nicely browned on the outside. The inside will be very tasty.

I don't like the flavor that the matchlight charcoal imparts to my food. I use hardwood charcoal in the grill and standard briquets and wood chunks in the smoker.
 
I would like to apply for the position of king grillmaster. I need to provide photos to you guys but I have a computer controlled kamado like this. It makes the *best* food. My ducane is next to it. 🙂

If anyone's interested I have a kabob recipe that's a huge hit amongst my guests.

You shouldn't do that, it squeezes most of the juices that flavor the meat out of it, and also can make the grill flare up.

Blasphemy! I love the blue! It looks like something you'd store your cremated elephant remains in.

Kamados are amazing, I made corn on there after kabobs, people were amazed at the flavor it imparts.
