I thought Edge was based on Chromium, like Chrome, but had nothing to do with Google?
Although it does look like Chromium is going to block uBlock as well, so maybe this wasn't even Googles decision?
I did find this for ads on videos:

AdSkipper is browser extension that automatically skips in video ads on websites. It works silently in background without disturbing your flow. AdSkipper doesn't block ads, but rather skips them, so websites cannot detect it that easy, as if it were just a regular ad blocker.

Haven't tried it.
