But, electric ovens in the home are superior for a variety of reasons. In restaurants, they generally can't recover temperature quite as well though. The ultimate solution is dual fuel - gas cooktop, electric oven (with convection).Then at least we an agree that all real chefs cook on gas burners instead of the abomination known as glass cooktops![]()

Heh thats what I have, I must be some kind of savant or something.
That's what I want, but man they're expensive. I already have a gas line behind my current oven too that could be put to use.
