Then at least we an agree that all real chefs cook on gas burners instead of the abomination known as glass cooktops ;)
But, electric ovens in the home are superior for a variety of reasons. In restaurants, they generally can't recover temperature quite as well though. The ultimate solution is dual fuel - gas cooktop, electric oven (with convection).

Restaurants tend to stick to gas for everything due to cost per thermal but, also due to the wiring and power draw. As a restaurant adapts to business changes, there are ever more demands for power and more circuits. Rewiring and changing tiers for electrical power ain't cheap.

I certainly prefer cooking on gas cooktops.

But I definitely prefer an electric oven. Or at least a really good gas oven with terrific controls.

I have a convection range, IIRC it was only $100 more than a regular range when I bought it, this is probably a bad thing to "home engineer" just go out and buy one..

That's what I want, but man they're expensive. I already have a gas line behind my current oven too that could be put to use.

hmmm - chalk it up to the fact that I'm younger/poor and haven't shopped for my own appliances yet (apartment)... I had no idea those existed.

Thanks - I've completely set my sights on them now, and will now only measure my success when I have the car I want and the oven I want (probably in the home I want). :D
