Trying to make a base recipe for fried rice

I've attempted numerous times to make fried rice and it always seems to be missing that certain fried rice flavor. I've tried hoisin sauce, black bean garlic sauce, dark peanut oil and none of these are it. I've looked at tons of recipes on the net but none of them seem to hold the clue. Anyone?????

get some day old rice, oil, peppers, soy sause, egg, chinese sausage, and maybe some vegatables (i like peas)

heat up oil, throw peppers in, then dice sausge and throw that in, cook sausge then add rice an veggies. add soy sause to taste and when you are done, turn off stove crack 1 or 2 eggs over rice and mix up, the eggs will cook enough and you are done.

eat!

Now that I got an electric wok, I make the best hot-dog fried rice you've ever tasted. ;)

Same as above...cept i add a little bit of sesame oil and some oyster sauce instead of the soy sauce. And instead of peppers i use onions.

Electric wok? Ha! Those things are completely worthless. Let me guess its got a teflon coating right?

Maybe that's my problem, I'm not using a wok. I am using high heat on a gas stove, though.

A chef at Japanese steak house told me to add a pinch of sugar to offset the saltiness of the soy sauce. Seems to help my fried rice a bit.

Fatty meat makes for a good fried rice. Try using ham, chinese sausage, chinese roast pork, bacon, or even spam.

How much oyster sauce? Also, are there varying kinds?

I use equal amounts to soy souce which is not much. your other ingredients should provide enough salt (chinese sausages/meats/preserved things)
