Why does running water make you have to go to the bathroom?
It's completely psychological. The sound of peeing is very similar to the sound of water filling a sink. You've been conditioned since you were potty trained (hopefully) to associate this sound with urination. Therefore, much like Pavlov's dog drooling in response to a stimulus, you have a conditional reflex to want to go #1 when you hear running water.
