Tips for shelling a hard boiled egg?

Sometimes it's easy, sometimes pretty tough. Is there a way that just about always makes it easy? TIA.

Crack it while its boiling hot, under a stream of cold running water. Crack the shell entirely around the equator and pull the two halves apart.

Crack it while it's still warm by rolling and pressing it on a countertop. After the shell is broken into small pieces it will easily peel away under cold water with the shell's inner lining.

Figures. You know that when you get HBE's catered or in a restaurant they don't sit around peeling them the way I've been doing it...

And that would be what? Quantum Fourier Transform?

There is a membrane underneath the shell. Got it?

Oh, yeah, I'm hip to that. I've peeled a lot of eggs. The still warm/hot thing won't work for when you boil a whole bunch of eggs in advance and refrigerate them. Ideas for that? Thanks for the replies.

Never refridgerate hard boiled eggs with the shell on? theyll refriderate just as good peeled as long as you seal the container and drain any accumulated water daily for the first few days.

Former Official Restaraunt Hard Boiled Egg Maker. 24-28 dozen a day in my prime.

If they are cooked just to the point of being done, they will be easy to peel. If they are overdone, they will get more difficult. Answer = don't overboil them.

Deja Vu...

Anyway...I've never had a problem. Just let them cool and then crack the shells...they come right off very easily. I just crack it all around on the counter top.

You have > 4k posts, so I'm guessing you're not serious. But if you are, it means "Quoted For Truth" (or "Quoting" or "Quote" or whatever).

If you aren't serious, no my "sarcasm meter" isn't broken. 1) It's an "irony meter" anyway. and 2) I don't know your style.
