If you are working with peppers or anything that is spicy, be sure to wash your hands afterwards otherwise you may suffer the consequences. Also if you eat something very spicy, be sure to drink milk because it's basic and will ease the pain.

I thought you drink milk b/c spicy stuff is fat soluable and the milk dissolves it...?

Wrong. It's because milk is non-polar and usually spice oils are also non-polar. Water doesn't help because it is polar bonded and will spread the oil around your tongue than absorbing it.

I don't know if there have been experiments done with this but I'm pretty sure they have but I think if you mix basic items with acidic items that it/they will be some what neutralized (assuming that you put the EXACT amount). While you may not get water, you will most likely get a PH balance that of water.

Basic/acidic does not matter in this case.

The hotness is caused by capsaicin contained in peppers, casein contained in milk helps neutralize it by bonding to it.

Man I love spicy foods! Anyone ever used Dave's Total Insanity Sauce? I have a bottle and its so dark red that it looks black. So damn spicy!

I'll just stick with that but otherwise, milk does help with with spicy foods.
