Time to lose some of that fat

I think the muscle is there, but there's a fair amount of fat around it (5'10/5'11 175lbs). I'm not overweight by any means, I think this is actually a healthy weight, but I need to trim down so I can look "cut".

First of all, what are some major things to cut out of ones diet in order to lower fat consumption?

Also, what should I try to get more of? My brother suggests more protein (tuna, salmon, etc), but what else? I'm taking creatine supplements, as well as cod liver oil, multi vitamins and vit C.

How much water should the average person consume in a day with an average workout routine (1+ hours a day)?
 
I'm in the same mode Alone. I'm about 5'11" and weigh 175ish, down from about 300 in 2005. I've been as light as 162, but I put on some fat while bulking up my muscle mass over the last year and now I want to get to about 9% (currently at 11.5%) BF before my first triathlon next year.

My method to lose fat (visceral) is to up my proteins and lipids and decrease my carbs, while doing strength and cardio training 6 days a week. My running mileage is up from 20 a week to about 30 now, I'm hoping to be up to 50/week by the time of my first race. Biking is no fun on a stationary machine so I'm not gonna go over 100/week there. And I have no access to a pool as of now, so my swimming is suffering. 🙁

My dietary changes go into effect after New Years, my wife has prepared too many goodies for me to completely cut out the bad carbs. Her feelings would be hurt if I didn't do justice to the special treats she makes me.
