I am running an Intel 980X with 12GB of memory, 3 hardrives, cd rom, and just ordered 2 7970ghz Edition cards.

I am currently running 2 5870's on this setup power by an Corsair HX1000. Do you think I need more power, an excuse to upgrade to the AX 1200i, or am I still good for a while? My current power supply is almost 3 years old.
 
1kW is more than adequate power for your requirements!

The HX1000 should have a few years life left in it, especially as it uses quality components.
