Cooked white rice yesterday for lunch, have about 1.5 cups left still on stove in pan with the lid on, should I use it to make some fried rice or should I just cook some more?
 
You're fine. You're re-cooking it. That's where fried rice comes from - cook left over rice that's been sitting out for days with stuff to cover up the stench.

Left over rice makes the best fried rice. Diced meat, shrimp, veggies, and scrambled egg + left over rice = epic win.
