If you want a super easy meal, just buy bags of frozen chinese dumplings. Boil them until they float. They should be done by then. Buy hot sauce, dumpling sauce, or soy sauce and dip them according to how you like it.
You can also fry the dumplings and they taste twice as good when you do. Get a flat skillet, spread cooking oil on it, heat the skillet and evenly place the dumplings across the skillet. After that, add water till the dumplings are half submerged. Let the water boil off and check the bottom side of the dumplings. If the bottom side is golden brown, they should be done. You can use the same sauces as above.
Live crabs are also super easy to cook and it's not terribly expensive if you are just buying for yourself, it's one of my favorite snacks. Heavily salt a pot of boiling pot of water and toss in the crab for 10-12 minutes. Remember to pick up the crabs from the rear, to avoid getting pinched.
Soup is impossible to mess up. Start with say a basic can of chicken noodle soup and just toss in vegetables and say ham until you get the flavor you like. Just remember not to boil it so long that the vegetables turn to mush.
Spagehtti is pretty easy also, but you have to be careful not to over cook the pasta. Buy a jar of sauce, boil it and again add meats and vegetables until you are happy. If you want to add say traditional italian sausages, you have to fry them first until they are done and then put them in the sauce.
