Thats roughly what I use and 7970 crossfire demolishes it. I'd say dual gpu would be useful for 1600p resolution, you can get away with 1 7970 but you'll have to turn a few eye candy options down here and there. With dual gpu I run everything maxed at 1600p, and most of my games hover in the triple digits (oc'ed the gpu's). No microstutter, I use vsync on and the msi afterburner limiter, everythings smooth as butter.
But, if you are on a budget a good monitor + 1 7970 is preferable to 2 7970's with a worse monitor
