Spending the next couple of weeks in Ulster County (Kingston) and looking for things to do over the weekend. My GF are thinking of visiting Mohonk and just using the trails.

Anyone know anything else we can explore?

Yeah, visiting Mohonk and New Paltz was the best I had to suggest. The Culinary Institute of America is in New Paltz, there might be some good places to eat there or near there.

The Culinary Institute of America is in Hyde Park which is just across the Hudson river from New Paltz.

Culinary is great eats (my wife works there :D) but be sure to make reservations.... only real "drop in" restaurant is Apple Pie Bakery Cafe... Caterina, American Bounty, and the French place need reservations.

New Paltz is kind of hippie-ish, but you may be into that kind of thing.

That said, there's nothing else to do here.

RUN AWAY

Just went to Rhinebeck to watch Moon. Like that little 4 block area, probably gonna go back and eat dinner there.

Gonna hit up CIA for dinner soon. We actually had to change our reservation from one restuarant to another because I didnt bring any slacks =p. I think the GF and I are gonna go hiking up by Mohonk Mountain House on saturday. It's really too bad this isnt the fall, the internet pictures make it look incredible during that time of the year

Ill take a look into New Paltz

I used to live in Kingston. If I were you, I'd go hiking. The Ashokan reservoir isn't far away, and it's pretty nice.
