How long does thermal paste need to stabilise? Or will it produce optimal results right after application?

It depends on the brand, different brands have different cure rates. Some need no curing at all.

You are alleged to find a slight reduction in temps (perhaps 1 or 2 degrees C) after up to 100 heat cycles (Power on, CPU Load and Power Off) with AS5. Unless you keep your ambient temperatures absolutely stable, it's a negligible benefit. Variations i the weather will probably disguise the drop.

For most people, whatever comes with your heatsink is fine. There's not much reason to pay for different thermal paste, as they're all generally within 3-4 degrees of each other.
