Didn't seem like it'd be difficult at all to cook enough to be safe. And, if you get your hamburg from a good source (i.e. not from a supermarket that obtains all its hamburg from some gigantic company half way across the company that grinds of 100 cows at a time), then there's really not a problem with having a good burger that's medium rare.

Especially if you grind the meat yourself, then you greatly decrease the exposed surface area and control the sanitation of the grinding process. In addition, you can choose your own cuts of meat to customize the flavor and fat percentage.

That looks absolutely AMAZING!!! I have got to try that sometime. Then again you could shove anything in the middle of meat and bacon and it would taste amazing (I'm thinking I'll replace the hotdog with some cheese).

I made some of these for the wife and myself last night and they were so damn good. Problem is that I became TOO full on the damn thing and it was not a pleasant feeling. Walked for 1 hour and 30 minutes last night trying to walk off the calories and keep from exploding.
