So I've been dieting and exercising for over 2 months now and lost quite a lot of weight, at a very steady pace. I started at 207lbs and managed to drop down to 178 a couple days ago. However 2 days ago I woke up and stepped on the scale, and what do I notice, I'm 188lbs, how in the heck did I gain 10lbs over night. Everyone says it must be water weight, however I didn't eat anything salty, and I drink a couple of litres of water a day, I stay hydrated with only water. I gave it 2 days, and the scale hasn't dropped a lb, I've seen it go up to like 190 but drops back down after I take a piss and what not. I'm just not sure how I could of magically packed 10lbs on.
 
Water weight can be from sodium, carb intake, difference in exercise (less will result in some retention), etc. I've wavered 10lbs in 2 days. Why does the number on the scale matter so much to you? As long as you feel better and enjoy the improvements in your body, the number itself doesn't matter.

My weight vary day to day 6-7 lbs, I was 187 lb in one day, after depositing in the toilet in the next day (morning weight)...181 lb
 
When I was around 200 pounds my weight would easily shift 5 pounds day to day although I don't know how much of that was not using a precise scale.
 
I gained weight but have seemingly topped out at around 170. My weight varies drastically between 160 and 170. I used to weight 150.

Not sure why I've peaked. I am likely not eating enough or getting enough protein? I mean, I look and feel a lot better, but the weight isn't going up. I'm just trying to fill out my lankly frame.

If you always weigh yourself first thing in the morning after you use the bathroom and with the same (or no) clothes on, then you'll get a more consistent reading than just weighing yourself at random times and in random clothing.
