Sounds delicious ... sweet bbq sauce is pretty nasty on pork or beef.

I'm having St Louis ribs tomorrow but alas I havn't had time to make my own ... picking them up at a place called Uncle Willies bbq.

I dunno about you, but I go through thermometers constantly. Expensive or cheap, they don't last 3 months. 🙁. I have a whole slew of wireless ones that are dead, and probably 4 mechanical ones that are unreadable or wonky.
 
I've got a 10 lb shoulder in the smoker since early this morning as well, and mine will also be getting the Eastern NC treatment
