I love the physics in Unreal Tournament 3 (or generally speaking the physics in the UE3 engine), but sadly they're barely used outside of the physics for the character's body (and vehicles). For actual game-play features which can potentially affect the course of battle and/or adventure I would simply have to go with Crysis / Warhead.
I'm not sure if both engine (UE3 and CryEngine) actually use Havok, but if they do it must be used differently (I prefer the character body physics and gravity effects in Unreal Tournament 3, but I prefer the vehicle and environmental physics in Crysis, it's visually and effectively acting differently). But saying which game uses the "best" physics is very tough, they all have their advantages and disadvantages I'd presume.

I actually noticed the physics in Half-Life 2 and used them to my advantage all the time during the game.

Is that the map in UT2K4 in where you jump into the the score nest in a bombing run and you fall down to death? into some hole with some strange laser points or something like that...
