The Asspen episode still is my favorite. The Butter's episode or the April Fools Terrance and Phillip special are honorable mention.
 
I can truely say that I've seen every episode, and ironically my favorite by far is the most recent one, where the dog whisperer came in and straightened out cartman.

Oh God that one was hilarious. Even though it's coming into its tenth season, it still manages to pull some great episodes.
