I was a non-believer until last night.

1). Cast iron pan, heated with a bit of olive oil.

2). Steak, seasoned to your liking.

3). Throw steak in pan, 2-3 min each side.

4). Place pan in preheated oven (400 degrees) for 8-10min.

5). Tada, a juicy steak with more flavor than off the grill.
 
Hmm I just

preheating oven with the pan to 500 deg, Turn stove on to high heat, pop the pan on, salt and pepper your steak pop it on 1 min on both sides,then pop it in oven, 2 min per side. And let it rest with aluminum foil ontop for 3-4 min. Then eat!

Pretty standard way of prepping steak.
 
Yup. Alton Brown's method. 10" cast iron pan, preheated in a 500-degree oven, put on a burner on high for a minute per side to sear, then 3-4 minutes per side in the oven. I haven't grilled a steak in nearly a year because of this 😀 I wouldn't have believed it could taste better than on a grill, but it does.
 
If I use a pan with grill lines like the image below will this method work correctly? I saw the Alton Brown episode and I'm really keen to try this but don't have a flat cast iron pan.

It could still work, but you'll be exposing less of the meat's surface area to the hot pan. You may have to add a little bit of time during each cooking stage. It may take you a few steaks to perfect it, but overall you'll be able to do it. Good luck!

It tastes different than off the grill, but I wouldn't say better or worse. I still prefer the grill, while my wife prefers the cast iron pan.

There are certain qualities like a nice char and the slightly smoky flavor that the pan and oven method can't duplicate. Likewise, the pan does give a nice sear and brown crust on most of the surface of the steak, which the grill cannot do - or at least mine can't, i dont have a flat top.

Overall, I'd say my life is better for having both methods to choose from 🙂

It would work but I would buy a flat pan. amazon usually has lodge skillets for cheap. That will drain the grease off, which is good for a grill but bad for a skillet.
 
Alton Brown method is mentioned above, but the times are off. It's 30 seconds per side on the burner, then 2 minutes each side in the oven for medium rare. I just did it last night too.

This varies heavily depending on the thickness and cut of steak. They're definetely guidelines, and I would 'test' things out a few times before trying it with company and such over

You'd be doing yourself a huge favor by picking up a cast iron pan. I don't know about NZ, but they're cheap as dirt in the US, and highly usable.

Yeah you have to modify. I did exactly the Alton Brown method the first time I tried it and I guess my steak was too thick because it was raw in the middle.

Also, don't use olive oil. Use safflower.

You're searing the steak in the pan which helps seal in those delicious juices. Do the same for a roast for great results.
