What do you guys think of these tempertures?

Core i7 920 @ 2.66 Ghz | Stock Cooler

It runs at around 35 degrees Celsius Idle. Is it possible to overclock it to 3Ghz on stock cooler and keep temps good? Since I realized this Asus board has this Turbo V program, It is a lot easier to overclock. It is already very fast, should I overclock or just leave it?

Idle temps do not mean diddly-squat. You need to look at the load temperature; i.e. the temperature of the four cores when they are at 100% load. You can use programmes such as Prime95, IBT, Linpack, etc. to fully load your CPU.

If you are looking for a high overclock then you will need something better than the stock Intel HSF; i.e. an aftermarket HSF. 3GHz should be OK on the stock HSF, although again watch the load temps. If they become too high then you need to use an aftermarket HSF.
